creamsicle cookies!
Wednesday, November 2, 2011 at 1:31PM I made a goal for myself to start posting recipes on my blog and I'm really excited about it! I cook all the time and I love to bake, too, during the chilly months. (I don't turn on the oven during the summer here, ever.) I've had this recipe ready to go for a while, as I created it for Cookie A's sock club way back in the spring! Cookie includes cookie recipes from herself and a guest baker each month with her sock club shipments. She's adorable. Anyway, when she asked me if I would be a guest baker one month, I basically flipped out (I really do love cooking and I'm very excitable. Ahem.) and of course I agreed!
The theme for the month in which I was a guest was clementine/citrus - inspired by the gorgeous orange yarn that Hazel Knits dyed for the club. I knew right away that I wanted to make up a recipe for a creamsicle-inspired cookie. I *love* creamsicles (the orange popsicles with vanilla ice cream middles) and I thought the idea of an orange-flavored sugar cookie sandwiched around a vanilla cream cheese middle had some pretty good potential! If nothing else, it gave me a great excuse to make some cream cheese frosting. ;) Happily, with a little playing around in the kitchen, I ended up with a delicious plate of Creamsicle Sandwich Cookies that turned out to be a big hit in my house.
Creamsicle Sandwich Cookies
These cookies are made in two parts - the orange outer cookie and the vanilla cream cheese frosting middles. You could also frost the cookies without doing the little sandwiches, if you prefer! I like the sandwiches because they are a faster way to get two cookies in my belly.
Orange cookies:
2 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1/2 cup sugar
1/2 firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon orange extract
zest of 2 oranges (approximately 2 TBSP)
Preheat oven to 375 degrees.
In a small bowl, combine flour, baking soda, and salt; set aside.
In a large bowl, cream butter, sugar, and brown sugar together. Beat in egg, vanilla extract, and orange extract until smooth. Gradually add flour mixture to the bugger/sugar/egg mixture until completely combined. Stir in orange zest.
Drop rounded spoonfuls onto ungreased cookie sheets (do not flatten). Bake 8 - 10 minutes or until golden brown around edges. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Set aside.
Vanilla cream cheese filling:
• 5 ounces unsalted butter, softened
• 8 ounces cream cheese, softened
• 2 cups powdered sugar, sifted after measuring
• 2 teaspoons vanilla extract
Beat butter, cream cheese, and vanilla until combined. Slowly add powdered sugar until smooth.
When cookies have cooled, match up two cookies of the same size. Take one cookie, and with the flat side up, pipe or spoon on the vanilla filling. (About 2 teaspoons per cookie.) Top with another cookie. Repeat until you run out of cookies! Eat them all!

One of the other neat things that Cookie did during the month I was a guest cookie baker was to have a Simple Things shawlette knit up in that month's sock colorway. The bright, happy orange was so nice. I took some pictures for the club back when she sent it:
